They tasted just as you described. That being said mullet caught from anywhere in the intercoastal are the finest fish you could ever put in your mouth if they are fresh. I am lousy with a cast net but I have a friend that brings me mullet from Fort Morgan and they are unbelievable. The mullet that live in the bay and gulf over sand taste much, much better. Almost like too different fish. Once you have them prepped before placing them in the smoker, its a necessity to apply lots of salt!! Being new to the area I decided I would try frying them up so got the oil hot, dipped fillets in egg/milk mixture and then rolled in fish fry mix.  They tasted like Mud.
