how far off can i catch legal amberjack i love snapper fishing but ready for something bigger

just about all the steel is holding jacks and the ones farther offshore are for sure holding legal jacks.

They are thick over the rocks or wrecks in 200+ right now. We marked them up everwhere we went last time out, (last Tuesday)...
