Cleaning sheepies. I cut along the backbone from just behind the the eye to the tail then roll the meat down cutting around the rib cage and leaving the rib cage intact, then fillet to the tail as usual. I find this quick and easy. Also all the guts and gore stay enclosed with the carcass so this method is not messy.Finally there is a nice lion type piece of meat off the head that usually gets discarded.
