Default White trout

I'm new to the area and have been out fishing a little bit here, we caught a bunch of white trout the other day and I couldn't find anything in the FWC book or website about limits/size/seasons/etc are you allowed to keep them? Are they good eating? If so how do you recommend preparing them?

Yes your allowed to keep them Limit dont think theres a limit Ice em down for awhile to firm up the flesh then fillet them use your favoret fish batter and fry em up fresh

White trout fall into this regulation from FWC:

For species that do not have an established bag limit, more than 100 pounds or two fish per harvester per day (whichever is greater), is considered commercial quantities.

So you must have a Commercial Saltwater Products License if you entend to keep more than 100 lbs of white trout.

Trust me catching 100 pounds of white trout is very doable this time of year

Everyone says not to freeze white trout, but I have not had problem with it. I put them in a gallon zip lock, complete fill with water, then freeze. Fresh or frozen fries up as good or better than specs.
