Default stone crabs

I bought some stone crabs 2 weeks ago andboiled them in crab boil, the meat stuck to the shell whenI cracked them. Antbody know how to keep this from happening? Or whats the proper way to fix em?

I have found that if you cut the slit in the claws before boiling thenadd a tbl spoon of olive oil to the water they don't stick.

I don't know about store bought but we DO NOT ICE THEM,just keep refrigerated.

Here is the deal on stone crabs. They can not be chilled or iced in anyway while they are raw. They have to be steamed immediatly when the boat hits the dock (or shortly after). If you get the raw claw cold the meat will stick.

Now, if you are buying claws they should already be cooked. If frozen just thaw them out and heat them up in the steamer, the meat shouldn't stick if they where cooked and frozen right.

how do you go about cutting slits in those thick claws?? i caught one last year that was so thick that i had to use a hammer to crack it

White vinegar (1 tblsp per gallon of water) will help with the meat sticking. Previous posts are correct, no crab should be iced or frozen before cooking.

I prefer to steam most crab.

Sounds like you cooked them to long. If cooked to long the meat will stick to the shell.
