Default Adequate water pressure to the outboard?

Just installed a new jack plate and fixed my pressure gauge so what psi should be going to my outboard on full throttle? I don't really want to burn up my motor now. Thanks

I've got a bay boat with a jack plate. The motor is a Yamaha 250. With a new impeller I run about 14lbs. After awhile and the impeller is worn in I usually run about 10 lbs. Those readings are at my optimum height with the jack plate. When you are running at plane look at the cavitation plate on the motor and make sure that t is at the same level as the water level exiting the rear most portion of the hull.

Just curious, when the PSI readings drop from 14, down to 10, does the engine show the same flow/pressure at the pee hole?

Yep. You can't tell much difference in the pee stream until it drops really low. Mine runs about the same as mentioned above but you can see it go up and down when the thermostat operates. At cruise with the jackplate up mine will go as low as 7 psi at times.

I really don't like to "run" shallow, not at any speed anyway. I got the jack plate to idle in and out of places that I would normally have to run the trolling motor.
