RE: How to fillet a flounder?
I will usually make the cut down the backbone and fillet out each side while following the bones towards the outside of the fish. Then cook a multitude of ways.
If it's a smaller flounder 13-14 inches or so, I will scale it, chop the head off, and begin the normal fillet process. But I will leave it attached at the sides of the fish. This leaves two empty cavities on each side. Then I will stuff with crab meat under the filletand fold it back over. Stick it in the oven till done and taste the nummy goodness.
